This is one of our favorite meals. Its really simple and works great as a freezer meal for something quick and really yummy. We make ours wheat, egg and diary free but its really easy to use whatever you normally use and have on hand. What you will need: Chicken (I used 3 large chicken breasts) Flour (I used Gluten free flour but you can use white flour, you can also just skip it all together and its just as good. If you don't use flour to coat you will need something to thicken the sauce up later) Rice (I use Jasmine rice, I think any rice would work with this) Apple cider vinegar Ginger (I use ground) Garlic (I use garlic salt, powder or fresh works just as good) Honey Soy sauce (Coconut aminos if you need a soy free option) Water Coconut oil (Any oil will work but I think chicken cooked in coconut oil is delicious and always use it) Cube up the chicken. See my red knife up there? Isn't it awesome!!?? I just bought a set of super bright colored knives and I love them. Cut through the chicken like butter... *Love them* Put some flour in a bowl and season. I used the garlic salt and ground ginger. Salt and pepper works if you are using fresh garlic and ginger. If you are not using any flour just season the chicken. Melt some coconut oil in a pan and get it hot and add the chicken. Once its cooked up take it out and set it to the side. In the same pan, should have bits of flour and oil still in it, add the fresh garlic and ginger if you are using it. (Add more oil if needed). Once thats cooked, or you are not using it start making the sauce. Add 1/4 cup of honey 1 tablespoon of apple cider vinegar 1 tablespoon of soy sauce 1/2 cup of water If you didn't use flour to coat the chicken add about a table spoon of so of flour or your thickener of choice to the water before adding to the pan. If it thickens up too much add a bit more water a tablespoon at a time. Add the chicken back to the pan and coat it with the sauce. Serve on top of rice or next to a big pile of veggies. If you want to use this as a freezer meal I freeze the chicken and sauce separate. Put the chicken, once cooled off, on a cookie sheet and freeze and then add to a freezer bag. You could freeze the sauce in a bag or put in a ice cube tray and add to a bag later for single serve sauce. Reheat the chicken in the oven and sauce on the stove top. The chicken like this makes great chicken nuggets! You could also use it to add to noodles and sauce. Its a great thing to have in the freezer for a few easy options during a busy week.
